Ingredients

The crust and crumble

  • cups almond flour
  • 1 cup rolled oats
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ cup maple syrup
  • cup almond butter

The filling

  • 2 cups frozen mixed berries
  • 1 Tbsp lemon juice
  • 2 Tbsp maple syrup
  • ¼ cup chia seeds

Instructions

  1. 1. Preheat the oven to 350°F and line an 8×8 baking pan with parchment paper or nonstick spray.
  2. 2. In a saucepan over medium heat, warm the berries, lemon juice, and maple syrup, mashing the berries until they burst.
  3. 3. Turn off the heat and stir in the chia seeds, then let the mixture cool completely in the fridge for 30 minutes.
  4. 4. In a bowl, combine almond flour, oats, baking powder, and salt, then mix in maple syrup and almond butter until well blended.
  5. 5. Reserve ½ cup of the dough, then press the remaining mixture into the bottom of the prepared baking dish.
  6. 6. Pour the chilled berry filling over the crust and sprinkle the reserved crumble on top.
  7. 7. Bake for 35-40 minutes or until golden brown, then let cool before cutting into bars.
  8. 8. Store any leftovers in the fridge.
