Berry Oat Crumble Bars

Instructions
- Preheat the oven to 375°F and line an 8x8-inch baking pan with parchment paper.
- In a bowl, combine oats, flour, brown sugar, lemon zest, baking powder, cinnamon, and salt.
- Mix in softened butter and vanilla until a crumbly dough forms.
- Set aside 1 ½ cups of the mixture for topping and press the rest into the baking pan.
- Bake the crust for 10-12 minutes until slightly brown.
- Prepare the filling by mixing fresh berries, jam, vanilla, and salt in a bowl.
- Spread the berry filling over the baked crust and crumble the reserved crust mixture on top.
- Bake for an additional 30-35 minutes until the topping is browned and filling bubbles.
- Allow to cool completely, then refrigerate for at least 2 hours before cutting into bars.
