Ingredients

The crust and crumb topping

  • 1 ¾ cups old-fashioned rolled oats
  • ¾ cup all-purpose flour (or gluten-free baking flour blend)
  • cup brown sugar, packed
  • 1 zest lemon
  • ½ tsp baking powder
  • ¼ tsp cinnamon
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • ½ tsp pure vanilla extract

The filling

  • 2 ½ cups fresh berries
  • ½ cup fruit-sweetened jam
  • ½ tsp pure vanilla extract
  • a pinch salt

Instructions

  1. Preheat the oven to 375°F and line an 8x8-inch baking pan with parchment paper.
  2. In a bowl, combine oats, flour, brown sugar, lemon zest, baking powder, cinnamon, and salt.
  3. Mix in softened butter and vanilla until a crumbly dough forms.
  4. Set aside 1 ½ cups of the mixture for topping and press the rest into the baking pan.
  5. Bake the crust for 10-12 minutes until slightly brown.
  6. Prepare the filling by mixing fresh berries, jam, vanilla, and salt in a bowl.
  7. Spread the berry filling over the baked crust and crumble the reserved crust mixture on top.
  8. Bake for an additional 30-35 minutes until the topping is browned and filling bubbles.
  9. Allow to cool completely, then refrigerate for at least 2 hours before cutting into bars.
