Ingredients

Base

  • 1 cup rolled oats
  • ½ cup protein powder, vanilla or plain
  • ¼ cup cornstarch
  • ¼ cup almond butter
  • ¼ cup milk of choice
  • ¼ cup honey (or other sticky sweetener of choice)
  • 2 tsp light brown sugar
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • pinch salt
  • ¾ cup berries, chopped

Crumb Topping

  • ½ cup rolled oats
  • cup protein powder, vanilla or plain
  • ¼ cup almond butter
  • 1 Tbsp water
  • 1 tsp cinnamon
  • pinch salt

Instructions

  1. Preheat the oven to 350°F and line an 8"x8" square pan with aluminum foil, greasing the foil.
  2. In a large bowl, mix the base ingredients: oats, protein powder, cornstarch, brown sugar, cinnamon, and salt.
  3. Add the almond butter, milk, sweetener, and vanilla extract to the dry ingredients and stir until well combined.
  4. Press the dough evenly into the prepared pan.
  5. Spread the chopped berries evenly over the crust base.
  6. In the same bowl, combine the crumb topping ingredients: oats, protein powder, cinnamon, salt, almond butter, and water. The mixture should be crumbly yet stick together when pressed.
  7. Crumble the topping mixture over the fruit.
  8. Bake for 30 minutes or until the crust is firm and the topping is golden brown around the edges.
  9. Allow the bars to cool completely in the pan before lifting them out using the aluminum foil and slicing into squares.
