Healthy Red White and Blueberry Crumb Bars

blueberries (fresh or frozen)
Instructions
- Preheat the oven to 350°F and line a 9x5 loaf pan with aluminum foil.
- In a bowl, mix strawberries, sweetener, cornstarch, chia seeds, and lemon juice for the berry filling.
- In another bowl, combine oats, almond butter, coconut, maple syrup, and salt for the oat bars.
- Reserve ¾ cup of the oat mixture, then press the rest into the loaf pan.
- Spread the berry mixture evenly over the oat base.
- Crumble the reserved oat mixture on top of the berry filling and add blueberries.
- Lightly press the top to help everything stick together.
- Bake for 20-22 minutes until the top is firm.
- Allow to cool in the pan for about 30 minutes before lifting out and cooling completely before slicing.
