Ingredients

Berry Filling

  • 2 cups strawberries, sliced
  • 2 Tbsp granulated sweetener of choice
  • 1 Tbsp cornstarch
  • 1 Tbsp chia seeds
  • ½ tsp lemon juice

Oat Bars

  • 1 ½ cups old fashioned rolled oats
  • ½ cup natural almond butter
  • ½ cup unsweetened shredded coconut
  • ¼ cup maple syrup
  • ¼ tsp salt

Topping

  • cup blueberries (fresh or frozen)

Instructions

  1. Preheat the oven to 350°F and line a 9x5 loaf pan with aluminum foil.
  2. In a bowl, mix strawberries, sweetener, cornstarch, chia seeds, and lemon juice for the berry filling.
  3. In another bowl, combine oats, almond butter, coconut, maple syrup, and salt for the oat bars.
  4. Reserve ¾ cup of the oat mixture, then press the rest into the loaf pan.
  5. Spread the berry mixture evenly over the oat base.
  6. Crumble the reserved oat mixture on top of the berry filling and add blueberries.
  7. Lightly press the top to help everything stick together.
  8. Bake for 20-22 minutes until the top is firm.
  9. Allow to cool in the pan for about 30 minutes before lifting out and cooling completely before slicing.
