Healthy Red White and Blueberry Crumb Bars

Ingredients

Berry Filling

  • 2 cups strawberries, sliced
  • 2 Tbsp granulated sweetener of choice
  • 1 Tbsp cornstarch
  • 1 Tbsp chia seeds
  • ½ tsp lemon juice

Oat Bars

  • 1 ½ cups old fashioned rolled oats
  • ½ cup natural almond butter
  • ½ cup unsweetened shredded coconut
  • ¼ cup maple syrup
  • ¼ tsp salt

Topping

  • cup blueberries (fresh or frozen)

Instructions

  1. Preheat the oven to 350°F and line a 9x5 loaf pan with aluminum foil.
  2. In a medium bowl, combine strawberries, sweetener, cornstarch, chia seeds, and lemon juice, and toss until well mixed.
  3. In a large bowl, mix oats, almond butter, coconut, maple syrup, and salt until combined.
  4. Reserve ¾ cup of the oat mixture, then press the remaining mixture into the bottom of the loaf pan.
  5. Spread the berry mixture evenly over the oat base, including any released juices.
  6. Crumble the reserved oat mixture on top of the berry filling.
  7. Add blueberries on top and lightly press down to help everything stick together.
  8. Bake for 20-22 minutes until the top is firm to the touch.
  9. Allow to cool in the pan for about 30 minutes, then remove using the foil and cool completely before slicing.
