Instructions
- Heat a Dutch oven on medium-high heat and add olive oil and pork belly to sear.
- Once seared to your liking, remove the pork belly and drain excess fat from the pot.
- Adjust heat to medium and sauté garlic, ginger, carrots, and mushrooms until soft.
- Deglaze the pot with broth, scraping up brown bits for flavor.
- Add soy sauce, rice wine vinegar, and sesame oil; stir and cook uncovered for 10 minutes.
- Add ramen noodles to the pot to cook and soften.
- Serve the ramen topped with cooked pork belly and boiled eggs.
