Ingredients

The broth and seasoning

  • 6 cups broth
  • 3-4 tablespoons soy sauce or liquid aminos
  • 2 tablespoons sesame oil
  • 2 tablespoons rice wine vinegar

The main ingredients

  • 1 teaspoon olive oil
  • 1 pound pork belly, sliced into strips
  • 3 cloves garlic, minced
  • 2 teaspoons fresh ginger, minced
  • 1 cup sliced shiitake mushrooms
  • ½ cup grated carrots
  • 6 oz ramen noodles
  • soft or medium boiled eggs for topping

Instructions

  1. Heat a Dutch oven on medium-high heat and add olive oil and pork belly to sear.
  2. Once seared to your liking, remove the pork belly and drain excess fat from the pot.
  3. Adjust heat to medium and sauté garlic, ginger, carrots, and mushrooms until soft.
  4. Deglaze the pot with broth, scraping up brown bits for flavor.
  5. Add soy sauce, rice wine vinegar, and sesame oil; stir and cook uncovered for 10 minutes.
  6. Add ramen noodles to the pot to cook and soften.
  7. Serve the ramen topped with cooked pork belly and boiled eggs.
