Instructions
- 1. Heat a large stock pot over medium heat and add the ground pork. Cook until almost cooked through.
- 2. While the pork is cooking, prepare the green onions, garlic, ginger, and kale.
- 3. Once the pork is nearly browned, add the white part of the green onions, garlic, and ginger. Stir and cook for 1-2 minutes.
- 4. Add the kale, coconut aminos, apple cider vinegar, fish sauce, and beef broth to the pot and bring to a low boil.
- 5. Reduce the heat and stir in the spiralized zucchini or noodles, cooking until tender.
- 6. Ladle the soup into bowls, top with the green onion and optional toppings, and serve.
