Ingredients

The soup

  • 1 lb ground pork
  • 4 pieces green onions (diced)
  • 4 cloves garlic (minced)
  • 1 tbsp ginger (grated)
  • 3 cups kale (chopped)
  • ΒΌ cup coconut aminos
  • 1 tbsp apple cider vinegar
  • 1 tbsp fish sauce
  • 6 cups beef broth
  • 1 large zucchini (spiralized)

Optional toppings

  • to taste soft boiled eggs
  • to taste hot sauce

Instructions

  1. 1. Heat a large stock pot over medium heat and add the ground pork. Cook until almost cooked through.
  2. 2. While the pork is cooking, prepare the green onions, garlic, ginger, and kale.
  3. 3. Once the pork is nearly browned, add the white part of the green onions, garlic, and ginger. Stir and cook for 1-2 minutes.
  4. 4. Add the kale, coconut aminos, apple cider vinegar, fish sauce, and beef broth to the pot and bring to a low boil.
  5. 5. Reduce the heat and stir in the spiralized zucchini or noodles, cooking until tender.
  6. 6. Ladle the soup into bowls, top with the green onion and optional toppings, and serve.
