Ingredients

Vegetables

  • 1 unit aubergine
  • 1 unit zucchini
  • ½ unit yellow pepper
  • 1 cup mushrooms

Tofu

  • 1 slab tofu

Seasoning

  • 2 tablespoons olive oil
  • to taste salt
  • to taste pepper
  • 2 cloves garlic
  • a handful fresh basil
  • a handful thyme

Bread and Cheese

  • 2 slices bread
  • 2 slices smoked gouda

Instructions

  1. Preheat the oven and prepare the broiler.
  2. Slice the aubergine and zucchini, and flatten the yellow pepper.
  3. Brush the vegetables with a mixture of olive oil, salt, pepper, garlic, and fresh herbs.
  4. Broil the vegetables in the oven for a few minutes until tender.
  5. Pan-fry the mushrooms and tofu, brushing them with the oil mixture.
  6. Layer the grilled vegetables, mushrooms, tofu, and smoked gouda between two slices of bread.
  7. Grill the sandwich in a panini press until golden and cheese is melted.
