Instructions
- Preheat the oven and prepare the broiler.
- Slice the aubergine and zucchini, and flatten the yellow pepper.
- Brush the vegetables with a mixture of olive oil, salt, pepper, garlic, and fresh herbs.
- Broil the vegetables in the oven for a few minutes until tender.
- Pan-fry the mushrooms and tofu, brushing them with the oil mixture.
- Layer the grilled vegetables, mushrooms, tofu, and smoked gouda between two slices of bread.
- Grill the sandwich in a panini press until golden and cheese is melted.
