Ingredients

The vegetables

  • 1 each yellow squash, cut into rounds
  • 1 each zucchini, cut into rounds
  • 8 ounces cremini mushrooms, stemmed
  • 1 small red onion, cut into 1-inch pieces
  • 1 each red bell pepper, cut into 1-inch pieces
  • 1 each green bell pepper, cut into 1-inch pieces
  • 1 ear fresh corn, cut into 1-inch rounds

The seasoning and sauce

  • cooking spray for the grill
  • extra virgin olive oil for drizzling
  • to taste sea salt
  • to taste freshly ground black pepper
  • optional sauce and dressing options (Tzatziki, Pesto, Greek Dressing)

Instructions

  1. 1. Heat a grill to medium-high and spray with nonstick cooking spray.
  2. 2. Thread the vegetables onto 4 metal skewers.
  3. 3. Drizzle with olive oil and season with salt and pepper.
  4. 4. Grill the skewers for 8 minutes per side, or until the vegetables are tender and lightly charred.
  5. 5. Remove from the grill, season to taste, and serve with desired sauce or dressing.
