Instructions
- 1. Preheat the grill to medium-high and spray with nonstick cooking spray.
- 2. Cut the vegetables into similar-sized chunks and thread them onto 4 metal skewers.
- 3. Drizzle the skewers with olive oil and season with salt and pepper.
- 4. Grill the skewers for 8 minutes per side or until the vegetables are tender and lightly charred.
- 5. Remove from the grill, season to taste, and serve with your desired sauce or dressing.
