Ingredients

The cake

  • 1 cup strawberries blended and pureed
  • cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 cup confectioners sugar
  • ½ cup canola oil or any oil of choice
  • ½ cup dairy-free yogurt

The frosting

  • 8 ounces vegan cream cheese
  • ½ cup vegan butter
  • 4 cups confectioners sugar
  • ½ teaspoon vanilla extract
  • teaspoon red food coloring (optional)

Instructions

  1. Preheat the oven to 180C/350F and prepare two 8-inch round cake pans with cooking spray.
  2. Blend the strawberries until pureed.
  3. In a mixing bowl, combine the flour, baking powder, and baking soda.
  4. In another bowl, mix the powdered sugar, oil, yogurt, and strawberry puree until creamy.
  5. Fold the dry ingredients into the wet mixture until just combined.
  6. Distribute the batter evenly between the prepared cake pans.
  7. Bake for 20-25 minutes until a toothpick comes out clean.
  8. Allow the cakes to cool completely in the pans before removing and frosting.
