Strawberry Grilled Chicken Salad

Ingredients

The salad

  • 8 oz boneless skinless chicken breast
  • 6 cups fresh baby spinach
  • 1 cup sliced strawberries
  • cup blueberries
  • ½ cup broccoli florets
  • ½ cup mandarin oranges
  • ¼ cup chopped pecans
  • ¼ cup chopped green onions

Honey Dijon Dressing

  • 1 tbsp whole grain mustard
  • 1 tbsp dijon mustard
  • 2 tbsp raw honey
  • 2 tbsp lemon juice
  • 1 clove garlic, minced
  • ½ tsp dry basil
  • to taste salt & pepper

Instructions

  1. Preheat the grill to medium-high heat (350-375°F).
  2. Season the chicken with salt and pepper on both sides.
  3. Prepare the grill by spraying with cooking spray or rubbing with an olive oil-soaked cloth.
  4. Grill the chicken for 5-7 minutes on each side until fully cooked.
  5. Remove the chicken from the grill and let it rest for 5 minutes.
  6. In a small bowl, whisk together the whole grain mustard, dijon mustard, honey, lemon juice, minced garlic, dry basil, salt, and pepper until smooth.
  7. In a large bowl, combine the spinach, strawberries, blueberries, broccoli, mandarin oranges, pecans, and green onions.
  8. Slice the grilled chicken and add it to the salad, then drizzle with the honey mustard dressing before serving.
