Ingredients

The salad

  • 1 lb boneless skinless chicken breast
  • 6 cups baby spinach
  • 2 pieces peaches, halved
  • 1 teaspoon grape seed oil
  • ½ cup blueberries
  • ¼ cup sliced red onion
  • ¼ cup pecan halves
  • 1 ounce crumbled goat cheese
  • to taste basil, for garnish

Honey Mustard Dressing

  • 1 tablespoon course ground mustard
  • 1 tablespoon dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon apple cider vinegar
  • to taste salt and pepper

Instructions

  1. Preheat the grill to medium-high heat.
  2. Season the chicken with salt and pepper on both sides.
  3. Lightly brush the flesh side of the peaches with grape seed oil.
  4. Grill the chicken for 5-7 minutes on each side until cooked through.
  5. Grill the peaches flesh side down for 3-4 minutes until grill marks appear.
  6. Remove the chicken and peaches from the grill and let them rest.
  7. In a small bowl, whisk together the mustards, honey, apple cider vinegar, salt, and pepper for the dressing.
  8. Assemble the salad by combining spinach, blueberries, red onion, goat cheese, and pecans in a large bowl.
  9. Slice the grilled chicken and peaches and add them to the salad. Serve with dressing on the side.
