Grilled Peach Chicken Salad

Honey Mustard Dressing

course ground mustard

dijon mustard

honey

apple cider vinegar

Instructions
- Preheat the grill to medium-high heat.
- Season the chicken with salt and pepper on both sides.
- Lightly brush the flesh side of the peaches with grape seed oil.
- Grill the chicken for 5-7 minutes on each side until cooked through.
- Grill the peaches flesh side down for 3-4 minutes until grill marks appear.
- Remove the chicken and peaches from the grill and let them rest.
- In a small bowl, whisk together the mustards, honey, apple cider vinegar, salt, and pepper for the dressing.
- Assemble the salad by combining spinach, blueberries, red onion, goat cheese, and pecans in a large bowl.
- Slice the grilled chicken and peaches and add them to the salad. Serve with dressing on the side.
