Instructions
- Mix orange juice, lemon juice, and olive oil in a small bowl.
- Season chicken breasts with salt and pepper, then pour the juice mixture over them.
- Cook the chicken on a grill or skillet over medium heat for about 5 minutes on each side until the internal temperature reaches 165°F.
- Allow the chicken to cool slightly, then slice it into thin strips.
- In a large bowl, dress the chopped lettuce with the citrus vinaigrette.
- Transfer the dressed lettuce to a serving platter and top with chicken, red pepper, mandarins, grapefruit, and walnuts.
