Ingredients

The salad

  • 1 head lettuce
  • 1 red pepper chopped
  • 3 mandarins or clementines sliced
  • 1 grapefruit sliced
  • ¼ cup walnuts

The chicken

  • lbs chicken breast
  • to taste salt
  • to taste pepper

The dressing

  • ¼ cup orange juice
  • 1 tbs olive oil
  • 1 lemon juice
  • cup citrus vinaigrette

Instructions

  1. Mix orange juice, lemon juice, and olive oil in a small bowl.
  2. Season chicken breasts with salt and pepper, then pour the juice mixture over them.
  3. Cook the chicken on a grill or skillet over medium heat for about 5 minutes on each side until the internal temperature reaches 165°F.
  4. Allow the chicken to cool slightly, then slice it into thin strips.
  5. In a large bowl, dress the chopped lettuce with the citrus vinaigrette.
  6. Transfer the dressed lettuce to a serving platter and top with chicken, red pepper, mandarins, grapefruit, and walnuts.
