Ingredients

The Chicken

  • 1-1½ lb. boneless skinless chicken breasts
  • 2-3 teaspoons garlic powder
  • ¼ teaspoon salt
  • teaspoon ground pepper

The Dressing

  • 1 cup 2% Greek yogurt
  • ¼ cup yellow mustard
  • 6 tablespoons honey
  • ½ tablespoon white vinegar
  • 1 teaspoon garlic powder
  • to taste ground black pepper

The Salad

  • 8 cups spring lettuce mix
  • ¼ cup crumbled gorgonzola cheese
  • ½ cup slivered almonds
  • 1 cup diced apples
  • 1 cup fresh blueberries
  • ½ cup chopped cooked bacon

Instructions

  1. Season the chicken with garlic powder, salt, and pepper, then set aside.
  2. Preheat the grill to 400ºF and spray the grates with cooking spray.
  3. Grill the chicken breasts for about 15 minutes, flipping halfway, until the internal temperature reaches 165ºF. Let sit for 5 minutes and then cut into small chunks.
  4. Prepare the honey mustard dressing by following the provided instructions.
  5. Assemble the salad by placing about 2 cups of spring lettuce mix in each bowl.
  6. Top each salad with equal amounts of gorgonzola cheese, almonds, apples, blueberries, bacon bits, and diced chicken breast.
  7. Drizzle about 2 tablespoons of honey mustard dressing onto each salad.
