Chipotle Lime Chicken and Sweet Potato Salad

Ingredients

The chicken and sweet potatoes

  • 1 pound boneless chicken breasts, cut into strips
  • 4 tablespoons extra virgin olive oil
  • 2 pieces chipotle peppers in adobo, chopped
  • 1 tablespoon honey
  • 1 teaspoon cumin
  • 2 pieces limes
  • 2 cloves garlic, minced or grated
  • kosher salt and pepper
  • 2 pieces sweet potatoes, cut into matchsticks

The salad

  • 2 pieces avocados, lightly mashed
  • 3 heads romaine lettuce, chopped
  • 1 piece mango, diced
  • 8 ounces feta, crumbled

Jalapeño Vinaigrette

  • cup extra virgin olive oil
  • cup fresh orange juice
  • 2 tablespoons lime juice
  • ½ cup fresh cilantro
  • 1 piece jalapeño, halved and seeded if desired
  • kosher salt and pepper

Instructions

  1. Preheat the oven to 425°F.
  2. Combine the chicken with olive oil, chipotle, honey, cumin, lime juice and zest, garlic, salt, and pepper on a baking sheet.
  3. On a separate baking sheet, toss sweet potatoes with olive oil, salt, and pepper, and roast both the chicken and sweet potatoes for 25-30 minutes, tossing halfway through.
  4. In a bowl, mix the mashed avocados with remaining lime juice and a pinch of salt.
  5. In a large salad bowl, combine lettuce, mango, feta, sweet potatoes, and chicken. Top with avocado and drizzle with vinaigrette.
