Chipotle Lime Chicken and Sweet Potato Salad

The salad

Jalapeño Vinaigrette

extra virgin olive oil

fresh orange juice

Instructions
- Preheat the oven to 425°F.
- Combine the chicken with olive oil, chipotle, honey, cumin, lime juice and zest, garlic, salt, and pepper on a baking sheet.
- On a separate baking sheet, toss sweet potatoes with olive oil, salt, and pepper, and roast both the chicken and sweet potatoes for 25-30 minutes, tossing halfway through.
- In a bowl, mix the mashed avocados with remaining lime juice and a pinch of salt.
- In a large salad bowl, combine lettuce, mango, feta, sweet potatoes, and chicken. Top with avocado and drizzle with vinaigrette.
