Chipotle Lime Sweet Potato Salad

The salad

curly kale, stems removed and roughly chopped

bacon, cooked to crisp and chopped
The dressing

Primal Kitchen Chipotle Lime Mayo

fine salt and black pepper

Instructions
- Heat 1 tablespoon of oil in a large skillet over medium-high heat and add the diced sweet potatoes with a dash of salt and pepper. Sauté for about 10-12 minutes until almost cooked through.
- Add the remaining ½ tablespoon of oil, bell pepper, onion, and garlic to the skillet. Sauté for another 5-10 minutes, stirring throughout.
- Add the kale and chopped bacon, and sauté for an additional 2-3 minutes until the kale is slightly wilted.
- Transfer the mixture to a bowl or leave it in the skillet, then gently stir in the Chipotle Lime Mayo. Adjust salt and pepper to taste.
- Garnish with fresh cilantro and green onions if desired, and serve warm with lime wedges.
