Instructions
- Heat olive oil in a skillet over medium heat and add sweet potato noodles, tossing until softened.
- Wipe the skillet and add corn kernels, cooking on medium-high heat until roasted.
- Combine the noodles, corn, cilantro, and pepitas, reserving some for topping if desired.
- Blend the dressing ingredients in a food processor until smooth and adjust to taste.
- Toss the salad ingredients with the dressing and serve.
