Ingredients

The Noodles

  • 3 medium sweet potatoes
  • 3 cups corn kernels
  • 1 each red bell pepper
  • 1 each jalapeno
  • 1 clove garlic
  • 2 canned chipotle peppers in adobo
  • 1 tablespoon honey
  • 1 14 ounce can black beans
  • ½ cup fresh cilantro
  • 2 each limes
  • 1 each avocado
  • ½ cup crumbled cotija or feta cheese

The Seasoning

  • 4 tablespoons olive oil
  • ¾ cup raw pumpkin seeds
  • 1 teaspoon smoked paprika
  • salt to taste
  • pepper to taste

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  2. Add the spiralized sweet potatoes and cook until softened, about 8 to 10 minutes.
  3. Stir in the corn, bell pepper, and jalapeno, cooking for an additional 2 to 3 minutes.
  4. Add garlic and cook for 30 seconds until fragrant.
  5. Mix in chipotles, honey, salt, and pepper, then add black beans, cilantro, and lime juice.
  6. In a separate skillet, heat the remaining olive oil, add pumpkin seeds and paprika, and cook until golden.
  7. Serve the sweet potato noodles topped with avocado, spiced pumpkin seeds, cheese, and lime wedges.
