Ingredients

The sweet potatoes

  • 2 lbs sweet potatoes

The crema

  • ½ cup sour cream
  • 1 Tbsp lime juice
  • ½ tsp lime zest
  • ½ tsp chipotle powder
  • ¼ tsp garlic powder
  • ¼ tsp salt

The toppings

  • 2 Tbsp olive oil
  • 2 tsp jerk seasoning (or seasoning salt)
  • 1 clove garlic
  • 1 red bell pepper red bell pepper
  • 1 15oz can black beans, drained
  • ¼ tsp ground cumin
  • ½ tsp salt
  • 1 lime lime
  • 1 jalapeño (optional) jalapeño
  • 1 green onion green onion

Instructions

  1. Preheat the oven to 400ºF.
  2. Make the Chipotle Lime crema by combining sour cream, lime juice, lime zest, chipotle powder, garlic powder, and salt. Refrigerate until ready to use.
  3. Wash and dry the sweet potatoes, prick the skins with a fork, and slice them in half lengthwise.
  4. Coat the sweet potatoes with olive oil and season with jerk seasoning.
  5. Place the sweet potatoes cut side down on a baking sheet and bake for 30 minutes until soft.
  6. While baking, prepare the toppings by mincing garlic, dicing the bell pepper, and slicing the jalapeño and green onion.
  7. Sauté the garlic in olive oil, then add the bell pepper and cook until softened. Add black beans, cumin, salt, and green onion, and heat through.
  8. Once the sweet potatoes are done, flip them over and mash the flesh.
  9. Top with the bean mixture, jalapeño slices, and a dollop of chipotle lime crema before serving.
