Instructions
- Preheat the oven to 400ºF.
- Make the Chipotle Lime crema by combining sour cream, lime juice, lime zest, chipotle powder, garlic powder, and salt. Refrigerate until ready to use.
- Wash and dry the sweet potatoes, prick the skins with a fork, and slice them in half lengthwise.
- Coat the sweet potatoes with olive oil and season with jerk seasoning.
- Place the sweet potatoes cut side down on a baking sheet and bake for 30 minutes until soft.
- While baking, prepare the toppings by mincing garlic, dicing the bell pepper, and slicing the jalapeño and green onion.
- Sauté the garlic in olive oil, then add the bell pepper and cook until softened. Add black beans, cumin, salt, and green onion, and heat through.
- Once the sweet potatoes are done, flip them over and mash the flesh.
- Top with the bean mixture, jalapeño slices, and a dollop of chipotle lime crema before serving.
