Mashed Sweet Potatoes with Chilies and Lime

Instructions
- Preheat the oven to 400ºF.
- Prick the sweet potatoes with a fork and bake for about an hour until tender.
- Combine jalapeno and shallot in a bowl with a pinch of salt and lime juice; let sit for 10 minutes.
- Remove potatoes from the oven, cool briefly, then peel and place in a bowl.
- Add the jalapeno and shallot mixture to the sweet potatoes along with oil, herbs, and salt; mash and combine.
- Taste and adjust seasoning as needed; garnish with peanuts if desired.
