Instructions
- Preheat the oven to 425°F and cut the tops off the garlic bulbs.
- Wrap the garlic in aluminum foil with olive oil and roast for about 45 minutes.
- Boil salted water in a large pot and prepare the sweet potatoes by peeling and cutting them into uniform pieces.
- Cook the sweet potatoes until fork-tender, then drain and transfer to a mixing bowl.
- Squeeze the roasted garlic into the sweet potatoes, discarding the skins.
- Add butter, kosher salt, and adobo sauce to the sweet potatoes and mix until smooth.
- Adjust the consistency with buttermilk and season to taste with salt and adobo sauce.
- Serve immediately or transfer to a baking dish to reheat later.
