Ingredients

The sweet potatoes

  • 5 pounds sweet potatoes

The garlic

  • 2 heads garlic

The fats and oils

  • 3-4 tablespoons extra-virgin olive oil
  • 4 tablespoons butter

The dairy

  • ¼ - ½ cup buttermilk

The seasonings

  • 2-3 tablespoons adobo sauce
  • to taste kosher salt

Instructions

  1. Preheat the oven to 425°F and cut the tops off the garlic bulbs.
  2. Wrap the garlic in aluminum foil with olive oil and roast for about 45 minutes.
  3. Boil salted water in a large pot and prepare the sweet potatoes by peeling and cutting them into uniform pieces.
  4. Cook the sweet potatoes until fork-tender, then drain and transfer to a mixing bowl.
  5. Squeeze the roasted garlic into the sweet potatoes, discarding the skins.
  6. Add butter, kosher salt, and adobo sauce to the sweet potatoes and mix until smooth.
  7. Adjust the consistency with buttermilk and season to taste with salt and adobo sauce.
  8. Serve immediately or transfer to a baking dish to reheat later.
