Savory Roasted Sweet Potatoes

melted butter or more olive oil (optional)
Instructions
- Preheat the oven to 400 degrees F.
- In a bowl, mix olive oil, minced garlic, and thyme.
- Place diced sweet potatoes on a baking sheet and toss with the olive oil mixture, seasoning with salt and pepper.
- Spread the potatoes into an even layer on the baking sheet.
- Roast in the oven for about 30 minutes, tossing once halfway through.
- If desired, broil for the last 1 to 2 minutes for a golden brown finish.
- Remove from the oven and drizzle with more olive oil or melted butter.
- Sprinkle with Parmesan and parsley, then serve immediately.
