Roasted Sweet Potatoes

Ingredients

The sweet potatoes

  • 24 oz Sweet potatoes (cut into 1-inch cubes; peeling not required)

The seasonings

  • 3 tbsp Olive oil (plus more for greasing the baking dish)
  • 1 tbsp Brown sugar (optional)
  • 4 cloves Garlic (minced)
  • ½ tsp Cinnamon
  • ½ tsp Sea salt
  • ¼ tsp Black pepper

Optional toppings

  • 2 tbsp Butter
  • 2 tbsp Fresh parsley (chopped)
  • 1 tbsp Fresh thyme

Instructions

  1. If time allows, soak the potatoes in cold water for at least 30 minutes, then drain and pat dry.
  2. Preheat the oven to 425°F (218°C) and lightly grease a 9×13 baking dish with olive oil.
  3. Arrange the sweet potato cubes in an even layer in the baking dish. Add olive oil, brown sugar (if using), minced garlic, cinnamon, salt, and pepper. Stir to coat.
  4. Roast the sweet potatoes in the oven for about 40 minutes, stirring gently halfway through, until fork-tender and lightly browned.
  5. If using optional toppings, place pats of butter over the hot roasted sweet potatoes and let it melt. Sprinkle with fresh parsley and thyme, then stir to coat.
