Instructions
- Preheat the oven to 425°F.
- Scrub the sweet potatoes clean and slice them into ¼" coins.
- In a large bowl, toss the sweet potatoes with olive oil, maple syrup, cinnamon, and salt.
- Place the potatoes on a sheet pan in an even layer.
- Roast in the oven for 15 minutes or until bubbly, lightly browned, and tender.
- Optionally, flip the potatoes halfway through cooking.
- Serve warm or store in the refrigerator for up to 4 days.
