Ingredients

The sweet potatoes

  • 2 medium sweet potatoes

The seasoning and oil

  • 2 tablespoons olive oil
  • 2 tablespoons maple syrup
  • ½ teaspoon ground cinnamon
  • ½ teaspoon kosher salt

Instructions

  1. Preheat the oven to 425°F.
  2. Scrub the sweet potatoes clean and slice them into ¼" coins.
  3. In a large bowl, toss the sweet potatoes with olive oil, maple syrup, cinnamon, and salt.
  4. Place the potatoes on a sheet pan in an even layer.
  5. Roast in the oven for 15 minutes or until bubbly, lightly browned, and tender.
  6. Optionally, flip the potatoes halfway through cooking.
  7. Serve warm or store in the refrigerator for up to 4 days.
