Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- In a large bowl, combine the sweet potato cubes with olive oil and stir to coat.
- Add rosemary, salt, pepper, garlic, and Parmesan to the bowl and mix until well combined.
- Spread the potato mixture evenly on the prepared baking sheet.
- Roast in the oven for 35-40 minutes until browned and soft.
