Instructions
- Preheat the oven to 400°F.
- Slice the sweet potatoes into ¼-inch rounds and place them on a large baking sheet, tossing with olive oil, salt, and pepper.
- Bake for 20 minutes, then flip the sweet potato rounds and bake for an additional 10 minutes or until crisp.
- Remove from the oven and sprinkle cheese and black beans over the sweet potatoes, then bake until the cheese is melted, about 5-7 minutes.
- Top with green onions, cilantro, avocado, and sour cream or Greek yogurt, and serve immediately.
