Ingredients

The nachos

Instructions

  1. Preheat the oven to 425°F and line baking sheets with foil, spraying with non-stick spray.
  2. Mix the smoked paprika, garlic, cumin, salt, and pepper in a small bowl.
  3. Use a mandolin to slice the sweet potatoes into thin, even slices.
  4. Place the sweet potatoes in a bowl, drizzle with olive oil, and coat the slices on both sides.
  5. Sprinkle the seasoning mix over the sweet potatoes and toss to combine.
  6. Lay the potatoes in a single layer on the baking sheets, overlapping slightly if necessary.
  7. Bake in the oven for 20-30 minutes, checking for browning around the edges.
  8. Remove from the oven and let sit for a few minutes to firm up.
  9. Transfer to a large plate or platter and top with your favorite nacho toppings before serving.
