Instructions
- Preheat the oven to 425°F and line baking sheets with foil, spraying with non-stick spray.
- Mix the smoked paprika, garlic, cumin, salt, and pepper in a small bowl.
- Use a mandolin to slice the sweet potatoes into thin, even slices.
- Place the sweet potatoes in a bowl, drizzle with olive oil, and coat the slices on both sides.
- Sprinkle the seasoning mix over the sweet potatoes and toss to combine.
- Lay the potatoes in a single layer on the baking sheets, overlapping slightly if necessary.
- Bake in the oven for 20-30 minutes, checking for browning around the edges.
