Ingredients

The Potatoes

  • 4 medium sweet potatoes, skin on
  • 1 tbsp olive oil
  • tsp paprika
  • a pinch cayenne pepper
  • 1 tsp garlic powder
  • to taste coarse salt and fresh-cracked pepper

The Toppings

  • ½ bell pepper sliced thin
  • cup sharp shredded cheddar cheese
  • ½ cup Pepper Jack light cheese
  • 1 medium scallion, chopped
  • to taste pickled jalapeño slices
  • 4 tbsp tomato, diced small
  • 1 tbsp chopped cilantro
  • to taste sliced black olives
  • to taste salsa, for dipping

Instructions

  1. Preheat the oven to 425°F and lightly spray a baking sheet with oil.
  2. Cut the sweet potatoes in half and then into wedges, yielding 24 wedges.
  3. In a large bowl, combine the sweet potato wedges with olive oil and seasonings, tossing to coat.
  4. Arrange the potatoes in a single layer on the baking sheet and bake for about 9 to 10 minutes on each side.
  5. Remove from the oven and place the fries into small oven-safe dishes, topping with bell peppers and cheeses.
  6. Return to the oven for about 2 minutes, or until the cheese melts.
  7. Finish with scallions, jalapeños, tomatoes, cilantro, and olives, and serve with salsa.
