Sweet Potato Irish Nachos

The Toppings

Instructions
- Preheat the oven to 425°F and lightly spray a baking sheet with oil.
- Cut the sweet potatoes in half and then into wedges, yielding 24 wedges.
- In a large bowl, combine the sweet potato wedges with olive oil and seasonings, tossing to coat.
- Arrange the potatoes in a single layer on the baking sheet and bake for about 9 to 10 minutes on each side.
- Remove from the oven and place the fries into small oven-safe dishes, topping with bell peppers and cheeses.
- Return to the oven for about 2 minutes, or until the cheese melts.
- Finish with scallions, jalapeños, tomatoes, cilantro, and olives, and serve with salsa.
