Instructions
- Heat olive oil in a skillet over medium-high heat and cook the chicken with salt and pepper until browned.
- Stir in adobo sauce and cook briefly before transferring the chicken to a plate.
- In the same skillet, add more olive oil and sweet potatoes, cooking until tender.
- Add chipotle peppers, chickpeas, tomatoes, and green onions, cooking until heated through.
- Return the chicken to the skillet, add lime juice, and mix well.
- Sprinkle with cilantro and serve warm.
