  • 1 pound boneless skinless chicken breasts

  • 1 can low-sodium chickpeas
  • 1 pint cherry tomatoes
  • 3 medium green onions
  • 2 tablespoons lime juice
  • 2 tablespoons chopped fresh cilantro

The seasonings and oils

  • tablespoons olive oil
  • ¾ teaspoon kosher salt
  • ¾ teaspoon freshly ground black pepper
  • 1 tablespoon sauce from canned chipotle chiles in adobo
  • 1 to 2 whole chipotle peppers from canned chipotle peppers in adobo

Instructions

  1. Heat olive oil in a skillet over medium-high heat and cook the chicken with salt and pepper until browned.
  2. Stir in adobo sauce and cook briefly before transferring the chicken to a plate.
  3. In the same skillet, add more olive oil and sweet potatoes, cooking until tender.
  4. Add chipotle peppers, chickpeas, tomatoes, and green onions, cooking until heated through.
  5. Return the chicken to the skillet, add lime juice, and mix well.
  6. Sprinkle with cilantro and serve warm.
