Pineapple Jerk Tofu

Ingredients

  • 1 package extra-firm tofu
  • whole pineapple
  • 1 bunch scallions
  • ½ small habanero or 1 large jalapeno
  • 2 tsp dried thyme
  • 4 cloves garlic
  • 1 ½ tsp ground allspice
  • 1 tbsp olive oil
  • to taste coarse salt and ground pepper

Instructions

  1. Cut four ¼ inch thick rounds from the pineapple and set aside.
  2. Cut the remaining pineapple into large chunks.
  3. In a food processor, combine pineapple chunks, scallions, chile, thyme, garlic, allspice, and olive oil; pulse until almost smooth.
  4. Place tofu and reserved pineapple slices in a shallow dish and cover with the pineapple marinade, turning to coat.
  5. Cover with plastic wrap and refrigerate for 1–2 hours.
  6. Preheat the grill to medium-high and brush or spray with olive oil.
  7. Brush excess marinade from the tofu and pineapple, then place them on the grill.
  8. Cook for approximately 8 minutes on one side, then turn and cook for another 8 minutes until lightly browned.
  9. Serve with leftover marinade.
