Pineapple Jerk Tofu

Instructions
- Cut four ¼ inch thick rounds from the pineapple and set aside.
- Cut the remaining pineapple into large chunks.
- In a food processor, combine pineapple chunks, scallions, chile, thyme, garlic, allspice, and olive oil; pulse until almost smooth.
- Place tofu and reserved pineapple slices in a shallow dish and cover with the pineapple marinade, turning to coat.
- Cover with plastic wrap and refrigerate for 1–2 hours.
- Preheat the grill to medium-high and brush or spray with olive oil.
- Brush excess marinade from the tofu and pineapple, then place them on the grill.
- Cook for approximately 8 minutes on one side, then turn and cook for another 8 minutes until lightly browned.
- Serve with leftover marinade.
