Cedar Plank Grilled Tofu with Cherry Salsa

Ingredients

The tofu

  • 1 large cedar plank (about 12 x 6 inches)
  • 4 tablespoons low sodium soy sauce
  • 1 tablespoon maple syrup
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 clove garlic (minced)
  • 1 14 ounce package extra firm tofu (drained and pressed)

The cherry salsa

  • 2 cups fresh cherries (pitted and coarsely chopped)
  • 2 tablespoons lime juice
  • cup chopped red onion
  • 1 pepper jalapeño (seeded and minced)
  • ¼ cup chopped fresh cilantro
  • to taste salt

Instructions

  1. Soak the cedar plank in water for 1 to 2 hours.
  2. Marinate the tofu by mixing soy sauce, maple syrup, lime juice, olive oil, paprika, and minced garlic in a shallow dish.
  3. Cut the tofu into 4 rectangular slabs and marinate them while the plank soaks.
  4. Preheat the grill and the soaked cedar plank on it for a minute or two.
  5. Arrange the tofu slabs on the plank and grill for 20 to 25 minutes, brushing with excess marinade occasionally.
  6. While the tofu cooks, prepare the cherry salsa by mixing all salsa ingredients in a bowl.
  7. Serve the grilled tofu topped with cherry salsa.
