Cedar Plank Grilled Tofu with Cherry Salsa

The cherry salsa

fresh cherries (pitted and coarsely chopped)

Instructions
- Soak the cedar plank in water for 1 to 2 hours.
- Marinate the tofu by mixing soy sauce, maple syrup, lime juice, olive oil, paprika, and minced garlic in a shallow dish.
- Cut the tofu into 4 rectangular slabs and marinate them while the plank soaks.
- Preheat the grill and the soaked cedar plank on it for a minute or two.
- Arrange the tofu slabs on the plank and grill for 20 to 25 minutes, brushing with excess marinade occasionally.
- While the tofu cooks, prepare the cherry salsa by mixing all salsa ingredients in a bowl.
- Serve the grilled tofu topped with cherry salsa.
