Ingredients

The tofu

  • 16 ounces tofu, firm or extra firm

The oil

  • 2 tablespoons olive oil

The spice rub

  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon smoked paprika
  • 1 teaspoon coriander
  • 1 teaspoon onion powder
  • ½ teaspoon fennel, ground

Instructions

  1. Cut the tofu into ½-inch slabs and press gently between towels to remove excess moisture.
  2. Mix the salt, pepper, smoked paprika, coriander, onion powder, and fennel in a bowl.
  3. Drizzle olive oil over the tofu slabs, coating them evenly, then sprinkle half of the spice mix on one side and flip to repeat on the other side.
  4. Preheat the grill for about 10 minutes and oil the grates if necessary.
  5. Place the tofu on the grill and cook for about 5 minutes on each side until nicely grilled.
