Lemon Achiote Grilled Tofu

Ingredients

The marinade

  • 2 tablespoons achiote powder
  • ¼ teaspoon cayenne pepper
  • 1 tablespoon raw cane sugar (or brown sugar)
  • 3 medium cloves garlic
  • 2 pinches salt
  • cup fresh squeezed lemon juice

The tofu

  • 12 ounces extra firm tofu

Instructions

  1. Whisk together achiote powder, cayenne pepper, and sugar.
  2. Smash garlic with salt to make a paste and add to the marinade mixture along with lemon juice.
  3. Whisk until combined.
  4. Place tofu in a baking dish and pour the marinade over it, ensuring all sides are coated.
  5. Refrigerate for at least one hour, flipping the tofu occasionally if possible.
  6. Preheat the grill to medium heat.
  7. Brush the top of each tofu slab with leftover marinade and grill until golden with grill marks, flipping halfway through.
  8. Serve the grilled tofu as desired.
