Ingredients

The cake

  • cups almond flour
  • 4 large eggs, separated
  • ½ cup sugar
  • 1 tablespoon lemon zest

Optional garnishes

  • ¼ cup sliced almonds
  • ¼ cup powdered sugar

Instructions

  1. Preheat the oven to 180°C (350°F) and grease an 8-inch cake pan.
  2. In a large bowl, beat the egg yolks and sugar until thick and creamy, then mix in the almond flour and lemon zest.
  3. In a separate bowl, beat the egg whites until stiff peaks form, then gently fold them into the batter.
  4. Transfer the batter to the greased cake pan and sprinkle sliced almonds on top if using.
  5. Bake for about 30 minutes or until the top is golden and firm.
  6. Let the cake cool in the pan for 20 minutes before inverting it onto a plate and dusting with powdered sugar.
