Instructions
- Preheat the oven to 350ºF and grease an 8-inch pan or two 6-inch pans, adding parchment paper to the bottom.
- In a large bowl, combine the almond flour, arrowroot starch, baking powder, and salt, whisking until no clumps remain.
- Add the eggs, maple syrup, vanilla extract, and almond extract to the dry ingredients and stir until smooth.
- Pour the batter into the prepared pan(s) and smooth the top.
- Bake until the top is golden and the center is firm, about 30 minutes (check smaller pans after 25 minutes).
- Let the cake cool in the pan for at least 30 minutes, then run a knife around the edge and flip it onto a serving plate.
- Allow it to cool completely before frosting or topping with fruit and powdered sugar.
