Ingredients

  • ¾ cup blanched almond flour
  • ½ cup cacao powder
  • 2 teaspoons baking powder
  • ½ teaspoon fine sea salt
  • ¾ cup maple syrup
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 350ºF and prepare two 6-inch pans or one 8-inch pan by greasing them and adding parchment paper.
  2. In a large bowl, mix together the almond flour, cacao powder, baking powder, salt, maple syrup, eggs, vanilla, and olive oil until smooth.
  3. Pour the batter into the prepared pan(s).
  4. Bake at 350ºF for about 28 to 30 minutes for the 6-inch pans, or 35 to 38 minutes for the 8-inch pan, until the center is puffed and firm.
  5. Allow the cake to cool completely before frosting.
