Instructions
- Make the shallot oil by heating sunflower oil in a saucepan, adding shallots, and cooking until golden.
- If using asparagus, blanch it in boiling salted water for 15 seconds, then transfer to ice water.
- Trim and wash the cilantro, drying it completely.
- Whisk together soy sauce, sugar, sea salt, and ¼ cup of the shallot oil.
- In a large bowl, combine cilantro, peanuts, asparagus, and sesame seeds, then drizzle with dressing and toss gently.
- Serve topped with reserved crispy shallots and herb flowers if desired.
