Ingredients

  • 1 cup sunflower oil
  • 1 cup sliced shallots
  • 6 ounces asparagus spears (optional)
  • 1 bunch cilantro with stems
  • 1 teaspoon shoyu or soy sauce
  • 1 teaspoon sugar
  • ½ teaspoon sea salt
  • ½ cup toasted peanuts
  • 1 tablespoon toasted sesame seeds
  • to taste herb flowers (optional)

Instructions

  1. Make the shallot oil by heating sunflower oil in a saucepan, adding shallots, and cooking until golden.
  2. If using asparagus, blanch it in boiling salted water for 15 seconds, then transfer to ice water.
  3. Trim and wash the cilantro, drying it completely.
  4. Whisk together soy sauce, sugar, sea salt, and ¼ cup of the shallot oil.
  5. In a large bowl, combine cilantro, peanuts, asparagus, and sesame seeds, then drizzle with dressing and toss gently.
  6. Serve topped with reserved crispy shallots and herb flowers if desired.
