Shaved Asparagus Salad with Sesame Chili Lime Dressing

Salad

bunch
asparagus, ends trimmed and stalks peeled into ribbons

small handful
grated cabbage (red, green, napa, savoy, etc.)

sprigs
mint, leaves removed and finely sliced

green onions, finely sliced

peanuts, toasted and roughly chopped
Instructions
- Prepare the dressing by combining ginger, garlic, lime zest, lime juice, chili paste, agave nectar, rice vinegar, salt, and pepper in a jar. Stir to dissolve the salt and mix well.
- Add sesame oil and olive oil to the dressing jar, cover, and shake vigorously to combine. Set aside.
- In a large bowl, combine the ribboned asparagus, cabbage, sliced mint, and green onions.
- Pour the dressing over the salad and toss gently using your hands or tongs to combine.
- Transfer the salad to a serving plate and garnish with chopped peanuts and additional mint if desired. Serve and enjoy.
