Ingredients

The salad

  • 2 bunches asparagus, tender parts, chopped into 1-inch pieces
  • 1 cup frozen peas, thawed
  • 3 radishes thinly sliced
  • ¼ cup pine nuts
  • cup crumbled feta cheese
  • fresh mint or basil leaves for garnish

The dressing

  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon fresh lemon juice
  • ½ clove garlic, grated
  • ½ teaspoon sea salt
  • freshly ground black pepper to taste

Instructions

  1. Blanch the asparagus in salted boiling water for 1 minute, then transfer to ice water to stop cooking.
  2. Drain the asparagus and dry it with a kitchen towel.
  3. Whisk together olive oil, lemon juice, garlic, salt, and pepper in a bowl.
  4. Add the asparagus and peas to the bowl and toss to coat.
  5. Transfer to a platter, drizzle with avocado dressing, and top with radish slices, pine nuts, feta, and herbs.
