Ingredients

The salad

  • 1 pound asparagus stalks
  • 1 cup cherry tomatoes
  • ¼ cup red onion
  • ¼ cup radishes
  • cup kalamata olives
  • cup feta cheese
  • 3 tablespoons fresh parsley

The dressing

  • ¼ cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • ½ teaspoon honey
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ½ teaspoon dried oregano
  • to taste salt
  • to taste black pepper

Instructions

  1. Blanch asparagus in boiling salted water for 2-3 minutes until tender and bright green, then cool in ice water.
  2. Drain and pat dry the asparagus, then cut into 1½ inch pieces.
  3. In a large bowl, combine asparagus, tomatoes, red onion, radishes, olives, and parsley.
  4. In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, Dijon mustard, honey, garlic powder, onion powder, oregano, salt, and pepper to make the dressing.
  5. Pour the dressing over the salad and toss gently to coat.
  6. Sprinkle with feta cheese and serve, garnished with additional parsley if desired.
