Instructions
- Blanch asparagus in boiling salted water for 2-3 minutes until tender and bright green, then cool in ice water.
- Drain and pat dry the asparagus, then cut into 1½ inch pieces.
- In a large bowl, combine asparagus, tomatoes, red onion, radishes, olives, and parsley.
- In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, Dijon mustard, honey, garlic powder, onion powder, oregano, salt, and pepper to make the dressing.
- Pour the dressing over the salad and toss gently to coat.
- Sprinkle with feta cheese and serve, garnished with additional parsley if desired.
