Asparagus Salad

Ingredients

  • 1 pound asparagus, woody ends trimmed
  • ½ cup water
  • ice for cooling asparagus
  • ¼ cup onion, halved and sliced into ½" pieces
  • 1 medium tomato, halved and cut into wedges or diced
  • 1 cup Italian dressing of choice
  • freshly grated Parmesan for garnish

Instructions

  1. 1. Add water and asparagus to a large skillet and cover with a lid.
  2. 2. Heat over medium-high heat for about 3 minutes until asparagus is bright green and fork-tender.
  3. 3. Remove from heat and drain the hot water.
  4. 4. Fill the skillet with cold water and add ice to stop the cooking process; let sit for 5-10 minutes until chilled.
  5. 5. Drain the asparagus and place it in a serving dish.
  6. 6. Sprinkle tomatoes and onions over the asparagus, then pour Italian dressing over the mixture.
  7. 7. Refrigerate for at least 1-2 hours to marinate; 6 hours is ideal.
  8. 8. Before serving, freshly grate Parmesan over the top.
