Instructions
- Whisk together olive oil, balsamic vinegar, Dijon mustard, salt, and pepper to make the vinaigrette.
- Cook bacon in a skillet over medium heat until crispy, then chop.
- Blanch asparagus in salted boiling water for 3 to 4 minutes, then transfer to an ice bath and chop.
- Combine asparagus, red onion, red bell pepper, and cranberries in a bowl.
- Add the vinaigrette and toss to coat, then chill until serving.
- Before serving, stir in bacon and almonds.
