Ingredients

Balsamic Vinaigrette

  • ¼ cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon Dijon mustard
  • ¼ teaspoon salt
  • teaspoon black pepper

Salad

  • 4 slices bacon
  • 2 pounds asparagus
  • ½ medium red onion
  • ½ cup red bell pepper
  • ¼ cup dried cranberries
  • 3 tablespoons sliced almonds

Instructions

  1. Whisk together olive oil, balsamic vinegar, Dijon mustard, salt, and pepper to make the vinaigrette.
  2. Cook bacon in a skillet over medium heat until crispy, then chop.
  3. Blanch asparagus in salted boiling water for 3 to 4 minutes, then transfer to an ice bath and chop.
  4. Combine asparagus, red onion, red bell pepper, and cranberries in a bowl.
  5. Add the vinaigrette and toss to coat, then chill until serving.
  6. Before serving, stir in bacon and almonds.
