Asparagus Snap Pea & Radish Salad

Ingredients

The salad

  • 1 bunch asparagus, ends trimmed
  • 1 cup sliced snap peas
  • 1 cup thinly sliced radishes
  • ½ cup crumbled feta cheese
  • cup chopped green olives
  • cup minced fresh dill

The dressing

  • zest from one lemon
  • juice from one lemon
  • 1 each shallot, minced
  • cup olive oil
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp dijon mustard

Instructions

  1. Boil water in a large pot and cook the asparagus for 2-4 minutes until tender, then drain and rinse with cold water.
  2. Cut the asparagus into 2-inch pieces and place them in a salad bowl.
  3. Prepare the dressing by whisking or shaking all dressing ingredients together.
  4. In a large bowl or platter, combine the asparagus, snap peas, radishes, feta cheese, olives, and dill.
  5. Drizzle the dressing over the salad, toss well, and serve.
