Mediterranean Chicken and Rice

Instructions
- 1. Spray a large skillet with avocado oil and cook the onion over medium-high heat for 10 minutes.
- 2. Add garlic and Italian seasoning, cooking for an additional minute.
- 3. Transfer the mixture to a slow cooker and add rice, chicken, broth, salt, and pepper.
- 4. Cook on low for 4 to 6 hours.
- 5. Remove the chicken, shred it, and return it to the slow cooker.
- 6. In a small bowl, whisk together sour cream and additional broth, then add to the slow cooker along with spinach, tomato, and feta.
- 7. Cook for another 30 minutes until the spinach is wilted, then stir in lemon juice and zest.
