Mediterranean Chicken and Rice

Ingredients

The base

  • 1 large onion, chopped
  • 1 tablespoon minced garlic
  • ½ teaspoon Italian seasoning
  • 2 cups rice
  • 2 cups chicken broth
  • 1 ½ pounds boneless skinless chicken breast or thighs
  • 1 teaspoon sea salt
  • ½ teaspoon fresh ground black pepper

The additions

  • ½ cup sour cream
  • ¼ cup chicken broth
  • 6 ounces baby spinach, chopped
  • 1 medium tomato, seeded and diced
  • 8 ounces crumbled feta
  • 1 medium lemon (juice and zest)

Instructions

  1. 1. Spray a large skillet with avocado oil and cook the onion over medium-high heat for 10 minutes.
  2. 2. Add garlic and Italian seasoning, cooking for an additional minute.
  3. 3. Transfer the mixture to a slow cooker and add rice, chicken, broth, salt, and pepper.
  4. 4. Cook on low for 4 to 6 hours.
  5. 5. Remove the chicken, shred it, and return it to the slow cooker.
  6. 6. In a small bowl, whisk together sour cream and additional broth, then add to the slow cooker along with spinach, tomato, and feta.
  7. 7. Cook for another 30 minutes until the spinach is wilted, then stir in lemon juice and zest.
