Ingredients

Marinade

  • 3 tbsp Balsamic vinegar
  • 4 cloves Garlic (minced)
  • 2 tsp Sea salt
  • ½ tsp Black pepper
  • 1 tbsp Italian seasoning
  • 2 lb Boneless skinless chicken thighs

Toppings

  • 1 tbsp Olive oil
  • 2 medium Roma tomatoes (diced)
  • cup Black olives (sliced)
  • 2 tbsp Red onions (diced)
  • ¼ cup Feta cheese (crumbled)
  • 2 tbsp Fresh basil (cut into ribbons)

Instructions

  1. Whisk together olive oil, balsamic vinegar, minced garlic, sea salt, black pepper, and Italian seasoning in a bowl for the marinade.
  2. Add chicken thighs to the marinade, ensuring they are well coated, and marinate for at least 1 hour.
  3. Heat olive oil in a large skillet over medium-high heat and sear the marinated chicken thighs for 5-6 minutes on each side until cooked through.
  4. Top the cooked chicken with diced tomatoes, sliced olives, diced onions, crumbled feta, and basil ribbons.
