Instructions
- Preheat the oven to 450°F.
- Mix together the marinade ingredients and reserve 1½ tablespoons.
- Rub the marinade on the chicken thighs and let them marinate for at least ½ hour.
- Toss the reserved marinade with chickpeas, olives, artichoke hearts, bell pepper, cherry tomatoes, and onion.
- Arrange the chicken and veggie mixture on a baking sheet and spoon lemon juice over the top.
- Bake for 20-25 minutes until the chicken is cooked through.
