Ingredients

Marinade

  • ¼ cup olive oil
  • 1 zest lemon
  • 4 cloves garlic
  • 1 tablespoon fresh rosemary
  • teaspoons oregano
  • 1 teaspoon coriander
  • ½ teaspoon smoked paprika
  • 1 tablespoon dijon mustard
  • teaspoons salt
  • ½ teaspoon pepper

Main Ingredients

  • pounds skinless boneless chicken thighs
  • 15 ounces chickpeas
  • ½ cup kalamata olives
  • 15 ounces artichoke hearts
  • 1 yellow bell pepper
  • 1 cup cherry or grape tomatoes
  • 1 small red onion
  • ¼ cup lemon juice

Instructions

  1. Preheat the oven to 450°F.
  2. Mix together the marinade ingredients and reserve 1½ tablespoons.
  3. Rub the marinade on the chicken thighs and let them marinate for at least ½ hour.
  4. Toss the reserved marinade with chickpeas, olives, artichoke hearts, bell pepper, cherry tomatoes, and onion.
  5. Arrange the chicken and veggie mixture on a baking sheet and spoon lemon juice over the top.
  6. Bake for 20-25 minutes until the chicken is cooked through.
