Instructions
- Pat dry the chicken breasts and set aside.
- Heat olive oil in a skillet over medium heat.
- Season the chicken breasts with salt and pepper on both sides.
- Add the chicken to the pan, cover, and cook for 7 minutes.
- Flip the chicken and cook for another 7 minutes until fully cooked.
- Prepare the sauce ingredients while the chicken cooks.
- Remove chicken from the pan and lower the heat.
- Add chicken broth mixture, garlic, butter, and lemon juice to the pan.
- Return the chicken to the pan and top with spinach, sun dried tomatoes, artichokes, and goat cheese.
- Cover and heat until spinach is wilted and cheese is warm.
- Serve the chicken with the sauce spooned over it.
