Ingredients

The Chicken

  • 2 large boneless skinless chicken breasts
  • 1 tbsp dried oregano
  • 1 tsp smoked paprika
  • 1 tsp Himalayan salt
  • 1 tsp freshly ground black pepper

The Vegetables

  • 6 mini bell peppers
  • 2 medium tomatoes
  • 2 jalapeño peppers
  • 2 green onions

The Dressing

  • 1 juice of lime

Instructions

  1. Preheat the oven to 450°F.
  2. Mix the spices in a bowl and coat the chicken breasts with the mixture.
  3. Place the chicken in a baking dish and arrange the vegetables around it.
  4. Cover the dish with aluminum foil and bake for 35 minutes.
  5. Remove the foil, switch the oven to broil, and cook for an additional 5 minutes until golden.
  6. Slice the chicken and serve with the vegetables.
