Instructions
- Season the chicken on both sides with oregano, salt, and pepper.
- Heat the oil in a large skillet over medium-high heat.
- Add the chicken and cook for 6 to 8 minutes per side until golden brown and an instant-read thermometer registers 160°F.
- Remove the chicken from the pan and add the garlic, cooking for 30 seconds.
- Stir in the tomatoes, olives, and chicken broth, cooking for about 3 minutes while scraping up any browned bits.
- Transfer the chicken to plates and top with the tomato and olive mixture.
- Sprinkle with feta cheese and finish with a squeeze of lemon juice if desired.
